Impossible Vegetable Pie
1 cup chopped fresh broccoli
1/4 cup chopped onion
1/4 cup chopped green pepper
1/8 tsp. ground pepper
1/2 cup grated cheese
3/4 cup milk
1/4 cup and 2 tablespoons Bisquik
2 eggs
1/2 teaspoon salt
Cook broccoli in glass bowl with 1 inch of water, cover with plastic wrap in microwave. (about 2 minutes) Drain. Spray pie plate with cooking spray. Mix broccoli onion, pepper, and cheese in pie pan. Beat remaining ingrediants until smooth. Pour onto 9 inch pie pan. Bake 350 for 35-45 minutes. Let stand for 5 minutes.
*** You can add different vegetables or ham or another meat.
I 1 1/2 x's this recipe for my pie dish. Its so yummy super easy. I got it from my cooking class in college.

Tracy Harthun’s Cornbread
1/4 cup (heaping) Cornmeal
1 cup Sugar
2 Eggs
1 cup Milk
1/4 cup Butter (Melted)
Combine Bisquik, cornmeal, sugar and mix. Add eggs, milk, and beat. Add butter and mix. Bake at 350 for 35min in square pan.
Made this the other night! It is sooooo yummy! I will always do this and never buy the easy add water stuff! Serve with chili and you have a delicious meal!

Another Week
I'm not good at adding pictures. I have a Nikon and for some reason my Mac does not read it and I don't know what to do about that. I am often at my moms (where I am right now :) ) and I don't know how to work the blue tooth transfer from phone to computer...??? But I will try to get them on here! This week was good. Bradley started the Academy and really enjoys it although he says it is really stressful and difficult. But we survived one week! Yay! Only 24 more weeks... : / I got up with Bradley each morning and either made him breakfast or lunch or both. He gets up at 6 (yuck) and leaves about 7 and then doesn't get home till 6 or after. I have had to be better about making dinner. I hate to do it every night. I don't have the counter space and I don't have anyone that will do my dishes. :) If I had that I would happily do it every night. So I usually make something in bigger quantities so we can eat if for a day or two after. If I had a freezer chest, which I think I totally need, I would cook for a day or two like crazy and make freezer meals and what not to make things easier. Someday! I had my Mary Kay meeting on Tuesday. We did a special guest event and potluck. We had fun! And Thursdays we do facials and I had a guest and sold over $250 of product! I love that! I love what I do and educating and making women feel beautiful at the same time I'm getting paid! I am working on a portfolio of before and afters. I need many more pictures. :) Friday I clean my mom's house. 5-6 hours of cleaning...blah. I am so glad that my mom is willing to let me clean to earn some good money so that during this time Bradley isn't working but 16 hours a week I have money coming in for certain. I have gone back to my cloth diapers...I had bought some soon after I had Lyla and really enjoyed them but then she got sick and had bad diarrhea and that was no fun so I stopped using them. But I hope that it helps save money. We will see. I have to wash in super hot water and I do it every day cause I don't have that many to use. So we'll see. If it doesn't pay off I'm going to the ease of throw aways. We took it easy Saturday. Ran errands late in the afternoon. Bradley works graveyard shift either Friday night and Saturday or Saturday Sunday so he sleeps when he gets home at 8 am. We are staying at my moms till Wednesday afternoon. Mom went to LA with Dad for Mary Kay director leadership training. Dad isn't going for MK but has some work to do down there. So I am here helping getting kids off to school and making dinner. Fun stuff. I think I mentioned babysitting I am babysitting my friend's son Jake till the end of Feb. I have him usually Mon-Thurs, but right now his dad is out of school so I just have him Mon. and Wed. half days. This week I'm doing Tues too. If it was warmer I'd take them to the zoo...but I'm not sure it will be warm enough. :( I'll have to figure something out that will be fun! Wed we go to the Library (not lately because of Christmas break) but it should be back on this week for story/singing time. We have a good time. Lyla is hard to keep track of because she darts here and there and doesn't listen very well...goodness. I'd like to potty train this girl we have started so many times and she has done good, but then refuses to do it anymore. She can be so stubborn. She is Miss Independent for sure. Well I can't think of anything else so see ya for now. :)

Birthday Week
I didn't get to post Sunday! It was my mom's 50th Birthday! So I was at her house after church helping out and finishing her gift. :) This last week has been busy. I babysat Monday and Wednesday. Wednesday was my birthday...although it just felt like another day :( My mom and dad did make dinner for us so that was nice and it was really yummy! Thursday I had a young women's presidency meeting. Friday I cleaned my mom's house and it was Bradley's last day at Royal T Property Management. He starts the police academy Monday morning...ahhh! So exciting. Saturday morning I went back to my mom's to continue helping her get her house put together and all the Christmas stuff put away before her parents got there. We went grocery shopping and then over to a friends house for dinner and a movie. I made 7 layer dip and a brownie cookie dessert. I had cookie dough that Bradley had bought from someone's child at work and it was very blan so I thought instead of wasting it...(because i wasn't going to eat as is) I thought I needed to spruce it up. I had Bradley make a brownie mix add lots of chocolate chip and then I cooked the brownies for about 15 min and then added the raw cookie dough on top and baked it for another 6 min or so. It actually turned out really good! I taught the lesson on Sunday about the Godhead and thought it went pretty well. There was much more class participation then I thought I would have! So yay! I had been preparing for it all week! I can't remember what else happened, but it felt like a busy week! I babysat yesterday then went to lunch with my mom, and Grandma & Pa Bretzing and Lyla. Watched Premium Rush...it was okay and then Bachelor, had family home evening on prayers and then went to bed. Today I rode my bike 4 miles to an appt. stopped by my mom's made some rolls for our Mary Kay guest event Potluck Party and now I need to bike back home yuck...hopefully all the biking will help me get skinnier this year! :) I'll add pictures when I get home! :) Here's the recipe I used. It's from allrecipes.com I love this site and they are yummy! I don't have a bread maker unfortunately so I did it a little differently.
Sweet Dinner Rolls

"This versatile dough makes wonderful soft, sweet dinner rolls, but can also be used for cinnamon rolls."
INGREDIENTS:
1/2 cup warm water (110 degrees F/45
degrees C)
1/2 cup warm milk
1 egg
1/3 cup butter, softened
|
1/3 cup white sugar
1 teaspoon salt
3 3/4 cups all-purpose flour
1 (.25 ounce) package active dry yeast
1/4 cup butter, softened
|
DIRECTIONS:
| 1. | Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough/Knead and First Rise Cycle; press Start. |
| 2. | When cycle finishes, turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400 degrees F (200 degrees C). |
| 3. | Bake in preheated oven for 10 to 15 minutes, until golden. |

Creamy Chicken on Rice (Crockpot)
Okay wanted to post a recipe we are eating. Thought I had 6 minutes to post it. :) Its creamy chicken on rice. It's bomb! And did I mention a CROCKPOT recipe! Love the crockpot!
3-5 Chicken Breasts (depending how "saucey" you want it or how much chn you have, most the time I thaw my chn then it will be done in 4 hrs.)
2 cans of cream of mushroom (you can use chn, but I love mushroom, I'll be making my own crm of soup too when I run out or get in the mood to make it)
I add a diced onion, but its optional
1 pkt of Italian Seasoning (I will be making my own when I run out of my packets stay tuned for recipe)
cook for 4-6 hrs
last 1-2 hours add 8 oz of cream cheese (sometimes I add with everything at the beginning i think it turns out the same but my sister in law says to do it at the end)
I steam broccoli and add it to this recipe so it has some veggies in it. I have also added more mushrooms in the crockpot or peppers. Pretty much anything you want. This isn't a healthy meal but you can make it healthier by adding your fav. veggies. And then you will want to serve over rice. I converted to brown rice and love it. Takes a little longer to cook, but I can't really taste the difference. I love it! I think its better than white! Okay that's it. I think you could totally prepare this in a large freezer bag and freeze it so all you do is dump it all in the crock pot. When I get myself a freezer chest this is what I will do! :)

New Year New Me
Happy New Years! Can you believe its 2013? What? Crazy! Time goes by so fast! Okay one of my new years resolution is to be better at "journal" writing, taking pictures, writing things down etc. So I thought why not blog it? Typing is easier and then others can connect with us easily through it! Yay! :) Okay so Bradley is going to the Police Academy Jan 7th! We are so excited, I'm a little anxious. Money will be tight, but hey we will make it work! I have decided to be more inventive and do more Do It Yourself (DIY) kind of things. So today I made my own mayonnaise. Didn't have any and wanted to make ranch dressing for my salad. (another one of my resolutions...eat better and lose all this weight I gained with Lyla!) So here's the recipe cause I know some of you are dying for it :) I also
thought I would put together a book of things I make myself! (All of which are none of my own recipes unless I say it is)
Mayonnaise
2 Large Eggs
1 c. Oil
1 Tablespoon Vinegar
I Tablespoon Lemon Juice
1/2 Teaspoon Salt
Separate Yolk and white of two eggs. Place yolks in a medium size bowl and beat until light yellow. While beating eggs add the oil 1 teaspoon at a time until 1/4 cup has been added. Continue beating and increase the amounts of oil alternating the vinegar and lemon juice until 3/4 cup of oil is added. Mixture should thicken as you add the oil. If it is add the rest of the oil. Add the salt at the end of the process. And chill before using.
Okay so I use 1 part mayo. and 1 part greek yogurt (a good substitute for sour cream) and then my ranch mix and it was pretty good and I am pretty sure healthier. :)
My goal is to update weekly but at least once a month so I will post more probably on Sunday!
